Mendokoro Toichi is a ramen restaurant in Nara Prefecture that has received rave reviews from ramen lovers. You will have to wait in line to get in.

Soup base is excellent and seafood-based

To be precise, you can taste a rich bonito broth based on a blend of chicken, pork, and seafood broth without chemical seasonings. The restaurant states, “The “richness” created by the mixture of natural nutrients and Japanese dashi culture in a bowl of ramen. No chemical seasonings or additives are used. Please enjoy the natural flavor and taste. It says so.

The menu includes the basic “Ramen (@700 yen)” (large portion of noodles @100 yen), “Tsukemen 200g (@700 yen)” and “Tsukemen 300g (@800 yen)”. Toppings such as flavored eggs (+100 yen) and chashu pork (+200 yen) are also available.

Ajitama Ramen

Unlike the overly refined taste of additive-free ramen, the broth is robust, thick, and just plain delicious! It has a robust flavor, but without the coarseness that pork bone broth tends to have.

The thick chashu pork topping is so soft that it falls apart just by touching it with chopsticks!

The noodles are pure white and specially made to look like udon noodles. They are so delicious when mixed with the soup!

Also recommend their highly perfected “Tsukemen” noodles!

The base is almost the same as ramen, but for a thick, well-balanced broth and the firmer texture of the noodles, tsukemen is the way to go. There is ground pepper on the table, and the restaurant recommends that you sprinkle this on the soup. It tastes so much better with a kick of flavor!
