Naka-Naka has a double broth of seafood broth and chicken white soup (paitan), with chashu pork, bamboo shoots, and seasoned egg as basic toppings. That’s pretty cheap for 780 yen!

The soup is a perfect combination of chicken and seafood flavors. The soup is made from asabiki chicken, sea bream and more than 10 kinds of seafood broth, and ginseng, which is not only tasty but also seems to have a tonic effect. The broth is not seasoned, yet it has a wonderful flavor. The charred onions floating in the broth add a rich and savory flavor.

The noodles are homemade and made of domestic wheat. Perhaps because they contain whole wheat flour, they have a wheat aroma, and the noodles themselves have a strong flavor. But they don’t destroy the flavor of the broth, and besides being a perfect match for the broth and noodles, they are just delicious!

The chashu pork is rare, but very tender because it is made from pork shoulder and cooked at a low temperature. The pork shoulder is cooked at a low temperature, so it is very tender. It still has a firm texture, and when you bite into it, the flavor comes out… and the aroma of spices spreads in your mouth.
