Today I would like to introduce Tonpi to Tori no (pork skin and chicken) Kouryumasu. The main restaurant is located in Tenma (Sakura-no-miya), and there is another one in Nishinakajima Minamikata. The main store is open only on weekdays, but the Nishinakajima store is open on Saturdays!
Soup base is pork and chicken
As the restaurant’s name suggests, the ramen soup here is a thick broth made from tonpi = pork skin and chicken.
The menu is very simple and easy to order, with only ramen (salt-braised pork) 800 yen, special ramen (Mikawa Mochi pork with authentic stone-roasted pork) 1,000 yen, Negi ramen 700 yen, and dinner-only dipping noodles 1,000 yen.
The noodles are thin and easy to eat with just the right amount of thick broth, and the salted braised pork is thick enough to be satisfying, but tender enough to fall apart like corned beef. The salt-braised pork is light but packed with meaty flavor.
Tsukemen are flat, medium-thick noodles. The main restaurant serves it only at night, but the Nishinakajima-Minamikata branch serves it during the day as well! Enjoy it with a broth thicker than ramen!
