Soup base is chicken
There are two types of soups: a cloudy, mellow chicken white soup (Toripaitan) that draws out the flavor of chicken straight from the chicken, and a cold, light Chintan soup with a uniquely Japanese aroma, which combines chicken and pork animal soup with Japanese dashi such as dried sardines and kombu seaweed.
And Toripaitan (chicken white soup) is available in three varieties: salt, soy sauce, and ma-yu (soy sauce soup with homemade burnt garlic oil floating on top). You can choose either “Sayaka” (salt) or “Haruka” (soy sauce) for the Chintan soup. There is also “tsukemen” (dipping noodles), which is made with yuzu (yuzu citron) white hot water soup.
All are recommended.
This is all a matter of taste, but in general, Toripaitan salt seems to be the most popular. The noodles of Toripaitan are medium-thick and firmly soak up the soup. In contrast, the noodles used for chintan are thin and can be eaten as lightly and refreshingly as soba noodles.
