The Hotel New Otani Special Pancakes, a popular sweet at the Hotel New Otani in Tokyo, Makuhari, and Osaka, have been redesigned for autumn. Hotel New Otani’s Hotel New Otani Special Marron Pancakes 2020 will be served at the three hotels’ coffee shops and all-day dining SATSUKI until Monday, November 30, 2020.
Hotel New Otani’s Special Pancakes, now in its 10th year
Since its creation in 2010, the Hotel New Otani’s special pancakes have evolved with the changing of the seasons and the use of a variety of ingredients carefully selected by the chef-pastry chef, such as sweetfish, melon, mango, chestnuts, and other ingredients.
The theme for the fall 2020 version, which will be our tenth anniversary year, is chestnuts, one of Japan’s most symbolic autumn foods. The star of the show is the pancakes, which are baked in two different batches of batter: a chunky batter made with Italian ricotta cheese and cascara powder, a nutritious coffee rind, and a savory batter made with white cereal, the hotel’s original cereal with millet, millet and amaranth.
The pancakes are baked slowly at a low temperature for about 5 minutes on each side until they are about 5 centimeters thick, and the texture of the fluffy pancakes is surprisingly smooth, with a gentle flavor that melts in your mouth. For toppings, you can choose from soybean milk cream “Soylebourg,” which is made from soybean-derived vegetable butter, select chestnuts in bran, yokan jelly and marron macaroons. You can switch between three different thicknesses of maple syrup during the actual tasting to enjoy the different flavors.
