④ Michelin-starred restaurant! “Namba Sennichimae Kama-Take Udon Akashiyaki”

The last restaurant, we will introduce to you is “Namba Sennichimae Kamatake Udon Akashiyaki”, located in the Oishii Mono-no-Yokocho at the links Umeda’s basement floor. This popular restaurant has been featured in the Michelin Guide’s “Bib Gourmand” for its thick, glutinous noodles.

Bukkake Chikutama-ten (Cold)

It is a “bukkake udon” with chikuwa tempura, half-boiled egg tempura, thick broth, green onion, ginger and lemon. You can choose between hot or cold dashi (Japanese soup stock).

The udon noodles are tightly moistened with cold water and have a slight elasticity. It’s not so much hard noodles as it is slippery and glutinous, with an exquisite texture.
The special dashi broth and ginger is refreshing and invigorating! The hearty chikuwa tempura is crispy and hot! It goes well with cold udon.

Kake-Kitsune Udon

This is a very large udon called “Age-no-Kitsune Udon” which is so big that you can hide it. The slightly sweet Kansai-style dashi is soothing. If you make kake udon, the slightly softened udon is slippery and goes down your throat very well! If you compare the kake and bukake, you can see the difference in the texture of the noodles.
