Super Mont Blanc” is the pride of Hotel New Otani, an autumn sweet that has evolved over the 22 years since its birth and has gained popularity every year. The luxurious taste of abundant Japanese chestnuts, which are in season in autumn, and the arrangement that brings out a new aspect of Japanese chestnuts are very appealing.
The “Super Mont Blanc” of 2022 is one size larger than the usual Mont Blanc and has an imposing appearance with plenty of volume. The moist and light “basque dough with soy milk” is layered with bittersweet “caramel cream,” fragrant “green tea ganache,” and “black honey yokan” on top of the base. The main ingredient is marron paste, which is layered with a rich green tea ganache, matcha ganache, and kuromitsu yokan (black honey yokan).
For the marron paste, the chef-patissier carefully selects the best chestnuts from among Japanese chestnuts such as “Rihei,” known as the “miracle chestnut,” “Gin-yose,” known as the king of chestnuts, and “Hitomaru,” a rare variety, according to the season.
