The pastry store “Patisserie SATSUKI” in the three hotels directly managed by Hotel New Otani (Tokyo, Makuhari, and Osaka) has introduced a new winter limited edition cake, the “New Extra Super Amaou Shortcake,” which will be available for a limited time starting Wednesday, December 1, 2021.

The “Super Shortcake” series was created in 2004 under the concept of “the ultimate shortcake created by the combined efforts of the hotel,” and all the ingredients that make up the cake are carefully selected to create a cake of the highest quality. In 2014, the “Extra Super Amaou Shortcake” was released to commemorate the 50th anniversary of the hotel, and the lineage of this famous cake continues to this day at Patisserie SATSUKI.
A more fragrant and lighter cream.
This time, the new Extra Super Amaou Shortcake, which was introduced in 2020, has evolved even further. By adding almond milk, wasanbon sugar, and a new ingredient, vanilla bean, to the fresh cream made with low-fat cream from Omuta, Kyushu, the cake has achieved a lighter texture and richer aroma, while maintaining its outstanding smoothness and flavor.
Two types of dough are used to sandwich Amau and special fresh cream.
For the sponge dough, two types of dough are used: a special dough with a fluffy texture made with brown rice eggs from chickens raised on the hotel’s own pesticide-free brown rice, and a flavorful dough made with the hotel’s original Japanese millet rice, J Cereal. The chef patissier strictly checks the flavor and taste of the Hakata Amao, the main ingredient, every morning and carefully selects only those with good shape.
The price is 3,240 yen per piece. Hotel New Otani’s Grand Chef, Shinsuke Nakajima, has been very particular about the ingredients and the process of making this ultimate souvenir cake, so why not take this opportunity to try it?
