Kyoto Hayashiya’s “Sakura x Matcha” Sweets
The highlight of the spring-only sweets presented by Kyo Hayashiya is the “Spring Breeze Fragrant Sakura Parfait” that looks like a row of cherry blossom trees in a transparent rectangular bowl. Based on a refreshing mugwort panna cotta, cherry blossom ice cream, cherry blossom bean paste, and bittersweet Uji matcha cream and dough are combined. The top is decorated with cologne and small red bean paste, cherry blossom leaves, and cherry blossom petals.

“Ohanami (Cherry-blossom viewing)” parfait with floating cherry blossom petals
The “Sakura Parfait” is a parfait with the image of “cherry blossom viewing”. A variety of Japanese and Western ingredients are layered on top of the cherry blossom gelée with cherry blossom petals floating on top, such as fresh matcha cream, sweet and sour strawberries, black sesame ice cream, and crumble.
