The “New Extra Super Melon Shortcake” Ver.3 is now available from Patisserie SATSUKI at Hotel New Otani. It will go on sale exclusively at Hotel New Otani Osaka from June 4 (Fri.).
“The evolution of shortcake using the best muskmelon
The “New Extra Super Melon Shortcake” is the most popular of the “Extra Super Series,” which pursues the “ultimate” with the best ingredients and hotel techniques. This is a cake using the “best muskmelon. Although it is a premium sweet that costs over 4,000 yen per piece, it is a best-selling cake that has sold a total of 40,000 units.
Light “soy milk cream” is used.
The “New Extra Super Melon Shortcake” Ver. 3, which has evolved for the third time, uses “soy milk cream” as a new ingredient. The light, plant-derived cream enhances the fresh, delicate flavor of muskmelon more than ever before. The gentle sweetness of the “soy milk white ganache” tucked into each layer is also a nice accent.
Dough is made from eggs.
In order to maximize the taste of melon, we started the dough from the egg. We worked with a farmer to develop a brown rice egg from a chicken raised on brown rice feed. The pure white dough baked with these eggs has a light texture and does not interfere with the flavor of the melon.
Luxurious use of the best muskmelon
Of course, as in the past, the melons used for the cake are also of the highest quality. Of the four grades of muskmelons produced in Shizuoka Prefecture, Fuji, Yama, Shiro, and Yuki, which are based on strict evaluation standards based on shape, sugar content, size, and meshiness, only the highest grade, Yama, is used. Only the highest grade, “Yama” or above, of the muskmelons produced in Shizuoka Prefecture are used.
